Young and committed
Alex, as Alexandre is called by his friends, runs the restaurant together with Fanny and Cosimo. The three young restaurateurs see their craft as a personal passion and run their business accordingly. The kitchen uses mostly local and seasonal produce, and Alex has created a wild herb patch on the roof above the kitchen. “I have dreamed of ‘alex’ since I was eighteen, this is my passion – I am at home here,” Alex enthuses.
With a good eye for detail
The fact that Alex, Fanny and Cosimo are truly committed believers is immediately noticeable even as a guest. Right away you feel comfortable in the cozy guest room with just 15 closely placed dining tables. The small terrace is also opened in good weather. Every detail is well thought out, from the classic black Thonet chairs to the perfectly light and airy lemon soufflé. Nothing is left to chance here. At the same time, an air of casualness and spontaneity is maintained. Our recommendation: Be sure to try it the next time you visit Sion.
