"The diners love the entrecôte with our famous Café de Paris sauce. It is served with tasty ʹpommes allumettesʹ French fries and a fresh salad with walnuts," explains the head chef. And what does he cook for himself when time allows? "On those occasions, I treat myself to the grilled veal schnitzel with risotto, arugula and lemon," he says without hesitation. "As a starter, I sometimes prepare myself one of our cheese and cold meat platters. And when the elections to the Federal Council come around, it goes without saying that the ʹBundesratsplättliʹ is the perfect choice," jokes the head chef.
