What do the guests order, what does the chef love?
Head chef Walczak already knows what he’d serve himself: a roast beef salad as a starter, followed by homemade pappardelle with duck ragout, root vegetables and blackberries. And what do the guests particularly like? "Right now, the Appenzell herb-crusted lamb breast is very popular as a main," he tells us. "For a starter, the Swiss Wagyu tongue with brioche, horseradish, and sauerkraut." And if your mouth is already watering just reading this, you’re in the best of company.
