When “Schloss Schauenstein” was leased in 2003 by the then-up-and-coming young chef Andreas Caminada, no one could have imagined that more than 20 years later, he would still be running it—now as the owner—and that it would be home to one of the world’s best restaurants: Few gourmet temples boast three Michelin stars and five GaultMillau toques.
The third star was awarded in 2010: for a cuisine that does not rely on the typical luxury ingredients that are de rigueur in other fine-dining restaurants. Instead of lobster, oysters, and caviar, “Schloss Schauenstein” primarily serves regional products, such as marinated fish from the surrounding lakes.
But even more important to Caminada are the vegetarian elements of his dishes: You can experience just how much can be made from something as simple as an onion, and sample your way through the castle’s entire vegetable and herb garden. The pantry of the surrounding gardens, fields, and forests offers, among other things, red cabbage, artichokes, and nasturtiums.
Lunch and Dinner Menu
If you’d like to experience the flavors of the Grisons mountains, be sure to reserve a table in advance. You can do so on the restaurant’s website, where last-minute openings are also posted.
You can choose from three-, four-, or five-course menus, available for both lunch (Thursday through Sunday) and dinner (Wednesday through Sunday). You also have the option of pairing your meal with alcoholic or non-alcoholic beverages.
For groups of six to a maximum of twelve people, the Chef’s Table is also an option. Here, you can sit in a cozy, elegant living-room atmosphere and watch the chefs prepare the dishes.
