GaultMillau: The most influential restaurant guide in Switzerland

GaultMillau is a renowned hotel and restaurant guide. It was founded in France in 1969 by the journalists Henri Gault and Christian Millau. The "Guide GaultMillau" was introduced in Switzerland in 1982. Since then, it has established itself as one of the most important and influential culinary institutions in the country.

GaultMillau regularly rates restaurants and hotels. Since 2020, there has also been the GaultMillau Channel, the online version that inspires with new culinary stories every day.

Every year, GaultMillau honors the best restaurants and chefs in Switzerland. The decisive criteria are the quality of the cuisine, the creativity of the kitchen team, the quality of service and aspects such as the ambience and the price-performance ratio. 

The GaultMillau rating system in Switzerland

The GaultMillau rating is regarded as a benchmark and seal of quality in the industry. The rating differs in detail from country to country, in Switzerland there is a points and toques system:

• 5 toques: world's best restaurants - 19 to 19.5 points (20 have never been awarded)
• 4 toques: formative cuisine, leading in creativity, quality and preparation - 17 to 18.5 points
• 3 toques: high culinary art, creativity and quality - 15 to 16.5 points
• 2 toques: very good cuisine that offers more than the ordinary - 13 to 14.5 points
• 1 toque: ambitious cuisine - 11 to 12.5 points

In 2025, seven Swiss restaurants achieved 19 points. This puts them at the top of the ranking.
