18 points for the "Talvo" restaurant
The "Talvo" restaurant in St. Moritz sticks to its historical roots: Gourmet cuisine has been served in a typical Swiss farmhouse dating back to 1658 for quite some time. Even after Kevin Fernandez and Lisa Carlevero took over the restaurant at the end of 2024.
The couple succeeded star chef Martin Dalsass, under whose leadership the "Talvo" was awarded 18 points by GaultMillau. This rating stands for a formative cuisine, leading in creativity, quality and preparation. The new manager Fernandez has worked in the Dalsass team since 2015.

Classics and Mediterranean influence on the menu
The menu at "Talvo" has changed slightly since the changeover. Many of the old chef's classics are still listed, but the selection of vegetarian and vegan starters has increased slightly. In addition, the Mediterranean influence is now more clearly recognizable.
The following applies to all dishes: only the best ingredients are used, seasonally selected, prepared with passion, refined and authentically presented. Chanterelles and Périgord truffles accompany sole in pea sauce and the Charra beef entrecôte is served with zucchini and pomegranate.
For two or more people, we recommend a free-range guinea fowl with chili, thyme, celeriac and croquettes. Attentive service and a well-stocked wine cellar with more than 800 labels round off a visit to "Talvo".
Good to know: If guests would like to have a dish from the former chef on their plate that is no longer on the menu, it can still be prepared on request.
Quaint ambience in the stylishly restored "Talvo"
The large farmhouse, which has housed the "Talvo" since 1954, has been stylishly restored several times since then, but has lost none of its Engadine charm with lots of light-colored wood. Then as now, it attracts celebrities who spend their vacations in the upscale ski resort of St. Moritz.
The hotel soon became a meeting place for après-ski society. In 2025, you can still enjoy the finest food and drinks in a rustic ambience at the "Talvo".
Restaurant "Talvo": off to new shores
Martin Dalsass ran the "Talvo" in Champfèr near St. Moritz for 13 years, now Kevin Fernandez and Lisa Carlevero are following in his footsteps - and filling them completely. The gourmet cuisine will remain as first-class as it has always been, and fortunately not much will change visually in the old farmhouse.
