What do the guests order, what does the chef love?
The key ingredient for Chef Philippe Bouteille’s favorite dish can be found little more than a stone’s throw away: For his main course, he most goes for fillet of whitefish from Lake Murten, served with pak choi, celery, kohlrabi and lemongrass. And for dessert? "I’d treat myself to rice pudding made with rice that I get from a paddy field in Vully, which I’d garnish with a little citrus and homemade granola."
For the guests’ favorite dish, the ingredients come from a little further afield.
That means the main ingredient of the starter: salmon from Graubünden. This delicacy is served with tataki sauce, sesame mayonnaise and fried nori. The crowning glory is the main course: Swiss veal rib-eye steak served with cauliflower and Pinot Noir jus.
