For many, salmon is as much a part of the festive season as the Christmas tree – but not just any salmon. One of the world’s most famous and exclusive smoked salmons comes from a farm that’s over 300 years old in the heart of Toggenburg in the canton of St. Gallen. The fish itself is sourced from Lostallo in Graubünden, Norway, or Scotland – but the closely-guarded recipe dates back to another era: from the last supplier to the court of the Russian Tsar, a place, as everyone knows, where only the very best was good enough.
